Stainless flues etc

Am looking at multi fuel stove plus SS flue to go direct through floor above, ceiling and roof. Seems to be a lot of different suppliers out there.
Any hints, problems, recommendations, suggestions?

How far above roof covering does the outlet have to go, say it's halfway up the pitch? Does it have to go up to ridge height frinstance?

600mm above the ridge or, if part way up the slope, a horizontal distance of either 3 or 3.5m to the nearest point (I can't remember which)
